Jewish Holiday Passover
Shabbat Shalom to all fellow Jews! The Jewish holiday is coming up Passover (Pesach)!! The meaningful celebration of the Jewish people’s liberation from slavery in Egypt. Jewish people have the challenge of creating delicious dishes that adhere to the strict Kosher for Passover guidelines.
They do keep Kosher for Passover. According to the Torah, the Israelites fled out of Egypt so quickly that they didn’t have enough time to let their bread dough rise. The heat from the sun baked the dough in their baskets as they hurried out of Egypt and they were left with flatbread. In commemoration of this event, Jews will eat matzo (also spelled ‘matzah’) during Passover. Observant Jews will abstain from eating any ‘chametz’ (food made from grains) during the festival. The only grain-based foods that are permissible to eat are Passover Matzo or foods made with Passover Matzo flour. These foods must be prepared and baked under strict Rabbinical supervision in under 18 minutes. After 18 minutes, the foods are considered ‘chametz’ and not permissible to eat. Ashkenazi Jews even take things a step further and also abstain from eating ‘kitniyot’ (rice, corn, legumes, and seeds) during the festival. Sephardic Jews (such as myself) do not practice the abstention of kitniyot; bring on the rice and beans!
